All about Chives - Available - but in short supply during winter

How to grow Chives:

Chives are very easily grown from seed. Clumps of chives can be dug up and split into smaller lots and replanted.
Chives will go dormant during Winter and will re-emerge in Spring. It is best to cut the Chives back regularly to encourage young new shoots.
Chives will self seed if you leave the flower heads on the plant.

What parts of Chives to use:

Leaves (or rather the stems) and the flowers, which are edible.

How to cook with Chives:

Chop finely (scissors are the best) and add to the dish just before serving.
Use whenever a mild onion flavour is required.

Examples:

Chives are used in salads, sandwiches, soups and casseroles. They can also be used as a garnish over other vegetables.
Great mixed in butter, cream chesse and baked potato.

Herb hints for Chives:

One of the most popular and widespread culinary flavourings is the allium (onion) family. Chives were recorded 4,000 years ago in China and appreciated there by the explorer Marco Polo.
Chives do not keep very well but can be frozen for up to six months if prepared correctly.
Don't discard the flowers but add them to your salads or use them to flavour wine vinegar.
Chives are a source of Vitamins A and C.
