What parts of Thyme to use:

Both leaves and flowers can be eaten

Examples:

Use fresh in salads or used as garnishes. It retains its flavour well in slowly cooked dishes, and is used to flavour soups, marinades (especially for olives), stuffings, casseroles, and baked or sauteed vegetables (especially mushrooms and courgettes).

Herb hints for Thyme:

Thyme is one of the most common of garden herbs, and many varieties are grown.
Thymus vulgaris or the common thyme (Thyme English winter) is one of the main medicinal thymes used for amongst others dry coughs, bronchitis, indigestion and gastritis.
Thyme is an essential ingredient of bouquet garni and many classical French dishes.
