All about Bay - Available

How to grow Bay:

Bay grows as a tree that can reach 20 meters high in warmer climates. It is an evergreen and can be harvested all year round. It is grown from cuttings or seed which is much harder. It is very slow to start, don't harvest in its first 3-4 years but let the bush become established.
Bay trees can be trained into any shape required.

What parts of Bay to use:

Strip the leaves off the stems and bruise slightly to release the flavour.

How to cook with Bay:

Use the leaves fresh or dried. Be sure to remove the leaves before serving the dish.

Examples:

Bay enhances the flavour of soups, stews and simmering sauces.
It is an essential ingredient of Bouquet Garni, a small herb bouquet that French cooks hang on a string to infuse stocks, soups and sauces.

Herb hints for Bay:

Bay should always be taken out of a dish before serving, as the sharp edge of the leaf can slice your stomach lining if swallowed.
